Meri Kahani – Chole Bhature ke Saath

Main jab chhoti thi na, toh Sunday ka matlab tha ek hi cheez – maa ke haathon ke bane Punjabi Style Chole Bhature.

Subah se maa kitchen mein busy, main aur bhaiya TV dekhte hue bas itna sochte the:
“Bas kab khana milega?”

Maa ka ek hi dialog hota tha –
“Sabra ka phal meetha hota hai, aur Chole Bhature ka toh aur bhi meetha!”
Aur believe me, woh wait pura worth hota tha.

Chalo, Ab Baat Karte Hain Recipe Ki – Puri Punjabi Style Mein!

(Note: Ye recipe simple hai, par taste full-on dhamaal hai!)

Chole Banane Ke Liye Samagri:

1.5 cup kabuli chana (raat bhar bhigo ke rakho)

2 medium pyaz (bareek kata hua)

2 tamatar (puree bana lo)

2 hari mirch (beech se kati hui)

1 bada chamach adrak-lehsun ka paste

2-3 badi elaichi

1 cinnamon stick (dalchini)

2 tej patte

1 chamach jeera

2 bada chamach tel ya desi ghee

1 chammach haldi powder

1.5 chammach lal mirch powder

1 bada chamach dhaniya powder

1 chammach garam masala

1 chammach amchur powder

Namak swad anusar

Hara dhaniya (chopped)

(Ek secret tip: Chole ko pressure cooker mein daalte waqt ek chai ki patti wala tea bag daal do. Wah color aur flavour aa jata hai!)

Bhature Banane Ke Liye Samagri:

2 cup maida

2 bada chamach suji

1/2 cup dahi

1 chammach cheeni

1/2 chammach baking powder

1/4 chammach baking soda

Namak swad anusar

Thoda garam pani (gundhne ke liye)

Tel (talne ke liye)

Step-by-Step Tareeka:

Chole Banane Ka Tareeka:

1. Raat ko bhige chane subah pressure cooker mein 2 tej patta, badi elaichi aur ek tea bag ke saath 4-5 seeti tak ubal lo.

2. Kadhai mein tel garam karo. Jeera daalo, phir pyaz.

3. Pyaz ko bhune jab tak woh sunehra na ho jaaye. (Isme patience chahiye, lekin yahi real flavor ka secret hai.)

4. Ab adrak-lehsun paste aur hari mirch daal ke achhe se bhuno.

5. Tamatar ki puree daalo aur tab tak pakao jab tak oil alag na hone lage.

6. Haldi, lal mirch aur dhaniya powder daal kar achhe se milao.

7. Uble hue chane daalo, aur 10 min halki aanch par pakne do. Thoda chana mash kar dena gravy ko thick banane ke liye.

8. Ant mein amchur aur garam masala daal kar 5 min aur pakao.

9. Upar se hara dhaniya daal kar sajado.

Bas, tayyar hai aapka full tadakta-bhadakta Punjabi style Chole!

Bhature Banane Ka Tareeka:

1. Ek bade bartaan mein maida, suji, baking powder, baking soda, cheeni aur namak mix karo.

2. Ab dahi daal kar halka garam paani ke saath soft dough bana lo.

3. Dough ko kapde se dhak ke kam se kam 2 ghante ke liye chhod do.

4. 2 ghante baad chhote chhote balls banao aur gol bhature bel lo.

5. Kadhai mein tel garam karo. Ek bhatura daal kar halka dabao, woh khud gubbare jaise fool jayega.

(Aur believe me, jab pehla bhatura phoolta hai na, uff… poore kitchen mein taali bajti hai!)

6. Dono taraf se sundar golden hone tak talo.
